To prepare Vegetable Sagu we need:
- 1 cup mixed vegetables (such as Carrots, Beans, Cabbage, Peas, etc.)
- 1/2 cup grated coconut
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp Coriander
- 1/2 tsp Poppy Seeds
- 1/2 bunch Mint leaves
- 1/2 bunch of coriander leaves
- 2 tomato
- 2 cloves
- 1 inch Ginger
- 1 inch Cinnamon
- 4 green chili, chopped (optional)
- 3 tsp oil or ghee
- Pinch of Asafetida
- Salt to taste
Steps to prepare Vegetable Sagu
- In a blender, add grated coconut, mint leaves, coriander leaves, green chili, ginger, cumin seeds, clove, cinnamon, poppy seeds,
- Blend everything together until you get a smooth paste.
- Pressure cook vegetable until 3 whistles
- Heat oil or ghee in a pan and add mustard seeds & Asafetida
- When they start to splutter add blended mixture
- Roast until moisture evaporates
- Add the cooked veggies & adjust the water consistency
- Add tomato
- Cook for 5 mins
- Transfer to serving bowl
- Savor Vegetable Sagu with Chapathi, Poori, Dose
